Inspired by his recent trip to Portugal Chef Lucas Carstens is experimenting in the kitchen with a dish incorporating 5-day aged Cape bream

We sourced the Cape bream from Abalobi, an APP for small scale fisheries #fromhooktocook traceable seafood by empowered fishers.
