Easy-peasy lemon posset

This bright and refreshing dessert is available on our M Lounge menu. The best part? When you break through the top with your spoon. Chef Lucas shares his recipe so you can make it at home.

600ml double cream
140g castor sugar
2 large lemons
Fresh berries, for garnish

Method
Heat cream and sugar in sauce pan, simmer for 3min
Remove from heat.
Zezt the lemons into bowl, then juice the lemons over the zezt.
When cream mixture is cool, whisk in the lemon juice and zezt.
Pour mixture in bowls and set in refrigerator.
Garnish with fresh berries when ready to serve.
